OEA Operational Assessments: 10 Questions Foodservice Operators Ask

What we evaluate onsite, how the assessment works, and what your team takes away.

01

What is an operational assessment, and why would we need one?

It’s an evidence-based review of how your food and beverage operation actually runs day to day — not how it looks on paper. We observe live service, talk with the people doing the work, and identify friction points that have become routine but are costing you time, money, or guest satisfaction. Most operations have more of these than leadership realizes.

02

What’s the difference between the Fresh Eyes Review and a full Operational Analysis?

Fresh Eyes is a focused, two-day onsite review built for speed — it surfaces observable issues and quick wins you can act on within 30 days. A full Operational Analysis goes deeper: financial systems, labor modeling, culinary execution, and facility fit, evaluated over up to five days onsite plus a multi-week analysis period, resulting in a phased strategic roadmap.

03

What does the onsite review actually look at?

The full arc of the operation: front-of-house service flow and guest experience, back-of-house kitchen organization and food safety, staff and leadership dynamics, operational discipline against posted standards, facility layout and bottlenecks, labor and staffing levels, and how the operation communicates with guests.

04

How long does the review take, and how disruptive is it to daily service?

Fresh Eyes is typically two days onsite, scoped to the size and complexity of your operation. We observe during active service periods rather than pulling staff aside, so the review runs alongside normal operations rather than interrupting them.

05

Do you evaluate our labor model and staffing levels?

Yes. We look at staffing levels relative to demand, scheduling practices, and cross-functional role design to determine whether your current labor model is supporting or constraining performance. A full Operational Analysis extends this into time/motion studies and labor modeling for scheduling optimization.

06

Do you assess kitchen flow, layout, and equipment?

Yes. We evaluate layout effectiveness, workflow and bottlenecks, visible maintenance needs, and physical constraints limiting throughput, quality, or safety — assessing whether your back-of-house is actually set up to deliver what the front-of-house is expected to serve.

07

What do we receive at the end of the review?

A written summary of observations across every area reviewed, a focused list of Quick Win opportunities that need no major investment, and prioritized recommendations for the next 0–30 days — each one tied to a specific finding, so your team understands not just what to do but why it matters.

08

How quickly can we start acting on the findings?

The Fresh Eyes Review is built to produce first improvements within 0–30 days of the visit. Findings are grounded in what we directly observed during service — not surveys or assumptions — so recommendations are specific enough to act on immediately.

09

What operational areas does a full Operational Analysis add beyond Fresh Eyes?

Deep financial modeling, procurement and cost control analysis, inventory management, and formal SOP and KPI dashboard development — the structural, longer-horizon work that a two-day snapshot isn’t scoped to cover.

10

Who conducts the assessment, and how do they gather findings?

A senior OEA consultant or partner leads every review in person — never a junior analyst. Before arrival, we review your menus, schedules, and posted procedures for context. Onsite, findings come from structured walkthroughs, direct observation during live service, and informal conversations with your team, not from checklists alone.
